Mycotoxins are substances which are produced by molds and they can be toxic for humans and animals. The aflatoxins are produced from aspergilus flavus and A. parasiticus. The aspergillus species is present all over the world and it is found in the soil, dust and on plants and fruits. Aflatoxins can cause cancer. The most relevant substances are aflatoxin B1, B2, G1, G2 and M1, M2. They are present in cereals, fruits like almonds and pistachios, dried fruits and plants like chili. The aflatoxins M1 and M2 develop in cows after consuming contaminated feed. They can only be found in milk and milk products.
