Bacillus cereus is found naturally in the soil, therefore it also can be found in food with dust or soil on it. The bacteria produce various toxins which can cause vomiting or diarrhea. The spores of the bacteria are highly resistant. They can not be destroyed by heat. If there are spores of Bacillus cereus in cooked foods and the cooling is insufficient the spores can change into an active bacterium which produces toxins again.
