Ochratoxin A (OTA) is a typical toxin used in storage which can be found in a lot of different raw materials and foods. Mostly it is present in cereals and cereal products. Furthermore it can be found in coffee, grapes (red), wine (red), cocoa or paprika. Ochratoxin A (OTA) is built up from different types of aspergillus and penecilium. Tests with animals have shown, that it can possibly cause cancer. Ochratoxin A is relatively heat resistant. So prevention measures are the most effective strategy against it.
